Ingredients:
Small potatoes
Olive oil
Mature cheddar cheese
Fresh rosemary, finely chopped
Preheat oven to 200C.

Preheat oven to 200C.
Place
potatoes in salted water and bring to a boil; cook until tender.
Place the cooked potatoes on a well-oiled baking tray and press down gently on each potato with a potato masher.
Brush the top of each potato with olive oil.
Season well with salt, pepper
and chopped rosemary.
Place
in the oven for 25 minutes until browned and crispy.
Remove
from oven and top with grated cheese. Then put back in oven for a
further 2 minutes, or until cheese melts.
